There are lots that I remember:

Gon versus "the Bomber"-HunterxHunter-It was pretty cool. And Gon lost his right arm..Wooh!! But he still won.

Cloud versus Kadaj-FFVII- Yes, I agree with Knight in Dark Armour. Cloud and Kadaj's fight was so cool! Especially when they were riding their motorcycles!!!

InuYasha and the gang versus Naraku-InuYasha- *sheds tears* The last episode was the most memorable fight of Inu and Naraku.. I loved it when Naraku's barrier was broken. Hehe..

Naruto and Sasuke's fight-Naruto-It was one of a kind when both transformed. (Sasuke looked hideous)

Kenshin and Shishio-Samurai X- Wooh!! Any sword fight with Kenshin is just so cool!!

Ichigo versus Byakuya-BLEACH-This is just so cool.

Hmm..If I were to make a fight never thought of before...that would be...

Killua(HunterxHunter)VS.Kakashi(Naruto)<---Id like to see this..
Hitsugaya(BLEACH) VS. Kanna (InuYasha)<----Wonder what will happen if Kanna sucks in Hitsugaya's soul?
Luffy(OnePiece) VS. InuYasha (Without Tetsuaiga)<----Both physical strengths shall be put to the test.
